During the 4th edition of the Bubbel brunch the house Michel Furdyna is invited from Celles-sur-Ource in the south of Bar-sur-Seine. Coralie Nieuwenhuizen is representing the vision and details of the vinification of this domaine. They currently grow 9,4 acres mainly using Pinot Noir and Chardonnay with a bit of Pinot Meunier and Pinot Blanc. The Wines are organic and because of the few degrees higher temperture the wines become a bit more full bodied. On this day everything is present in the Champagnes: Fruity, acidic, minerality, rosé, brut nature, aged and a touch of oak barrels here and there. They also have availability to bottle fresh but very old vintages dating from 1989!
